Milk and dairy products are a staple of a person’s daily diet. Without it, puddings, creams for cakes and desserts, bird's milk, oatmeal and milk soups, as well as cream, cheese or butter would not be possible to prepare. In addition, milk is a rich source of nutrients. The most common use is for cow's milk, which, when subjected to special treatment, can take a condensed or powdered form, thus retaining a longer shelf life. The ability to thicken milk had been known to the Mongols since the 13th century. Interestingly, it is Asians – mainly Chinese and Japanese – who constitute the largest group of people who do not absorb the lactose contained in it. Technological development allowing for increased production, shortened delivery time to the recipient, and change in eating habits has resulted in a significant increase in the demand for milk and dairy products among urban populations. in the second half of the 19th century in Europe, including Germany.
